Donna Hay’s Hummus

I know this is a very basic recipe, but I thought it would be a simple yet delicious way to take part in April’s Monthly Mingle, hosted by Meeta.

It was my first time making hummus and the result was great - recipe from Donna Hay.

Donna Hay’s Hummus
from Modern Classics Book 1

400g drained canned chickpeas
3 tablespoons tahini
3 tablespoons lemon juice – I used lime juice
60ml (¼ cup) water - I used this + 1 ½ tablespoons
½ teaspoon cumin
1 clove crushed garlic
sea salt and cracked black pepper
2 tablespoons olive oil

Process the chickpeas, tahini, lemon juice, water, cumin, garlic, salt and pepper in a food processor until combined – I used a blender.
With the motor running, gradually pour the olive oil processing until just smooth.

Makes 1 ¾ cups.

  1. I find hummus both delicious and satisfying - although I have only tried it once, staying at a hotel where mainly vegetarian dishes were offered. My husband did, for some reason, not like it at all.

  3. Hummus is a little miracle of a dish -- some ordinary ingredients that come together in a special way. I'd probably add a bit more garlic, because I love it garlicky!

  5. Hummus is one of the our favorite appetizers to prepare. And to serve it with pita bread it's surprising this does not turn into a main course!

  6. Patricia, one of the beauties of hummus IS that it's so basic, but still so delicious. We make a similarly simple one, and it always gets eaten.

    One great use of hummus, by the way, is as a sandwich spread in place of mayo. Spread some on a crusty bread, add a little leftover roasted chicken and maybe some lettuce--wonderful! Tastier and healthier for you than mayo.

  8. I just made hummus for the very first time over the easter weekend...and it was a success! :) I used a recipe from a book on Arab cuisine but I have that DH book as well...will try that next :)

    I am seriously addicted to chickpeas...especially since they have the coolest name...I like to say "chick-peace!" :)

  13. Patricia - hummus is delicious. It's so healthy and simple, and you can dress it up so many ways. I like lemon and dill as an a little "extra" flavoring.

  14. Hummus is one of my mainstays for antipasto. It's so easy to make yourself at home. Much better and more satisfying than buying the ones in the shops.
