Carrot and kale risotto with roasted radishes, or “everything-but-the-kitchen-sink-risotto”

Saturday morning, feeling super lazy after cleaning the apartment, all I really wanted was to take a shower, open a bottle of wine and lay on my couch. But we gotta eat, right? After cleaning the apartment and doing the laundry Joao and I get pretty hungry – never fails. :D I was not feeling very creative or inspired to cook, to be honest with you: I could have made burgers, but had forgotten to defrost the beef. I did not feel like eating pasta. So I opened the fridge and grabbed everything in front of me: carrots, leeks, radishes. Oh, there were also some kale leaves already washed, so I just gathered everything and decided to use them up in a risotto.

It is a carrot and kale risotto with roasted radishes, a.k.a. “everything-but-the-kitchen-sink-risotto”. :)

As I did not have any vegetable stock at hand, I used leeks and onion to enhance the risotto flavor and boiled 1 bay leaf in the water I used to replace the stock. It worked like a charm! The risotto turned out really good, guys – sorry for not being modest at all. :D
In the end, the roasted radishes did not go so well with the rest of the dish: I wanted to add a different texture to the meal, but the risotto worked very well without the radishes. I bring you the recipe anyway, in case you want to serve the radishes in a different meal, with a different dish.

Carrot and kale risotto with roasted radishes

Radishes:
5 small radishes (100g in total), sliced in half lengthwise; if radishes are large, cut them in 3 or 4 pieces
2 teaspoons olive oil
salt and freshly ground black pepper

Risotto:
3 cups (720ml) water
1 bay leaf
3 tablespoons unsalted butter
½ tablespoon olive oil
1 small and thin leek, only the light green part, thinly sliced
½ small onion, finely diced
¾ cup (165g) Arborio or Carnaroli rice
¼ cup (60ml) dry white wine
salt and freshly ground black pepper
2 small carrots (160g in total, weighed before peeling), coarsely grated
2 kale leaves, without the central stalk, torn into small pieces
¼ xícara (35g) coarsely grated parmesan

Preheat the oven to 200°C. Line a small baking sheet with foil. Transfer the radishes to the foil, drizzle with the olive oil and season with salt and pepper. Stir to coat, spread on the sheet leaving some space between the radishes and roast for 30 minutes, turning at half the oven time. Remove from the oven and set aside.

In the meantime, make the risotto: place the water and the bay leaf in a small saucepan over high heat until it boils. Keep it simmering. In a medium saucepan, melt half the butter and olive oil. Add leek and onion and cook, stirring occasionally, until tender, 3-4 minutes. Add the rice and cook for 2-3 minutes, to coat all the rice grains with fat. Add the wine and cook until it evaporates. Season with salt and pepper. Stir in the carrots. Start adding the water, 1 ladle at a time, then stirring constantly so the rice releases its starch.
Repeat this until all the water has been used, the rice is al dente and the risotto is thick and glossy – about 20 minutes. Stir in the kale, the remaining butter and the parmesan. Check the seasoning, adjust if necessary, cover the pan and wait 5 minutes. Transfer risotto to serving plates, arrange the radishes on top and serve immediately.

Serves 2 generously, or 3 lighter servings

Quarantine vegetable soup

Hello everyone, long time no see. Ages ago I decided to be honest with myself and accept the fact that I no longer had time to write on this blog, unfortunately – I can barely update the one in Portuguese. But with these crazy, uncertain times we are living I thought I should ask you how it has been for you.

This is my third week isolated, went out only once to buy groceries. How is it going for you? I miss my nephew, miss going to work and to the gym, miss buying things like fresh veg whenever I want to, miss going to the movies. But I know I am privileged and one of the lucky people who can work from home and I have food on my table.

I have been cooking a lot, trying to make everything stretch as much as possible to avoid unnecessary trips to the grocery store. I also try to make each batch of food last for at least 2 meals. I have baked bread, but no sweets: my husband does not like them, and I don’t want to eat everything myself.

I made this soup earlier this week and it was enough for 2 dinners – my husband loves soup and if he wasn’t so eager to eat it the soup would have probably lasted for 3 meals. :D It is a riff on another soup I make regularly. I hope you like this recipe and I also hope to hear from you. xx

Quarantine vegetable soup
own recipe, a riff on this one

1 ½ tablespoons olive oil
½ large onion, finely chopped
1 leek, light part only, finely sliced
1/3 cup finely diced celery - I used frozen, unthawed
2 garlic cloves, finely chopped
1 ripe tomato, deseeded and chopped
3 large carrots, peeled and diced
3 large potatoes, peeled and diced
1 large courgette, diced
boiling water, enough to cover the vegetables (about 1,5 liters, but it will depend on the size of your saucepan)
salt and freshly ground black pepper
2 bay leaves
150g frozen spinach, unthawed - here in Brazil that would be 5 portions

Heat olive oil in a large saucepan over medium-high heat. Add the onion and cook until transparent, stirring occasionally, about 2 minutes. Add the leek and cook for 1 minute. Add the celery and cook, stirring occasionally, for 2 minutes – if you use frozen, like me, cook for 4 minutes, because it will cool the bottom of the saucepan slightly. Add the garlic and cook until fragrant – do not let it burn or it will taste bitter.

Add the tomato and a pinch of salt and cook until it is mushy. Add the carrots, potatoes and courgette and stir to combine. Cover with boiling water, season with salt and pepper and add the bay leaves. When the soup comes to a boil, reduce the heat to low, cover partially and cook until vegetables are tender, 25-30 minutes – this will depend on the size you cut them; I test the carrots and if they are tender the soup is ready.
Turn off the heat and with an immersion blender, blitz the soup for a couple of seconds – you want the mixture to be half chunky, half smooth. Add the spinach and stir slowly, until it defrosts and gets mixed into the soup – this will cool the soup a little bit and make it ready to serve.

Serves 5-6

Lentil soup with crispy salami - waiting for fall to come

Summer here is over, however someone forgot to tell Mother Nature about it: the weather continues to be hot leading to uncomfortable nights for those who like me do not own an air conditioner at home.

While I look forward to cooler days and nights, I felt like sharing with you one of my favorite soups, sort of like Kevin Costner in Field of Dreams: maybe if I post soups on the blog, fall will actually come. :)

This lentil soup is comforting, delicious and freezes well if you keep the fresh oregano out. If you want to keep it vegan it is just a matter of omitting the salami – I love it because it adds a crunchy, salty touch to the soup.

Lentil soup with crispy salami
own recipe

2 tablespoons olive oil
2 leeks, sliced in half lenghtwise for easier washing, then sliced in half moons
½ onion, finely diced
1 small carrot, finely diced
1 large garlic clove, minced
2 tablespoons tomato paste
1 cup (200g/7oz) dried green lentils, soaked in cold water for 20 minutes before cooking, then drained and rinsed
3 cups (720ml) vegetable stock, hot
2 cups (480ml) boiling water
2 bay leaves
handful of fresh oregano leaves
salt and freshly ground black pepper
100g (3½ oz) salami slices – if they are too large, cut them in half

In a large saucepan over medium heat, heat the olive oil. Add the leeks, onion and carrot and cook, stirring occasionally, until vegetables are soft, about 8 minutes. Stir in the garlic and cook for 1 minute only. Stir in the tomato paste and cook for 1 minute. Add the lentils, cook for 1 minute, then add the stock, water, bay leaves and oregano. When it starts to boil, cover partially, turn the heat down and cook, stirring occasionally, for 20-25 minutes or until lentils are soft, but not mushy. Season with salt and pepper, remove the bay leaves and remove from the heat.
Now the salami: heat a nonstick flying pan over high heat and grill the salami slices for a couple of minutes or until golden on both sides. Transfer to a plate lined with paper towels to remove excess fat. Cool completely.

Pour the soup into bowls and top with the salami slices. Serve immediately.

Beef and leek pide

I believe that the first time I saw/heard of Turkish pizza was watching one of the episodes of the fantastic Ottolenghi's Mediterranean Island Feast, a long time ago – what he actually made was called lahmacun and it looked absolutely delicious, topped with a fresh salad.

Fast forward many months and I was reading about pide recipes on a magazine (the Australian Delicious, if I am not mistaken) and it looked similar to Ottolenghi’s lahmacun, however shaped slightly differently. I decided to then search about it some more, and ended up making my own version of it.

I first made pides for lunch on a lazy Saturday, already expecting compliments from my husband for he loves sfihas; However, he went so crazy about them that from the second time onwards I started making 1 ½ recipes each time – 4 pides were not enough for the both of us. :D

Beef and leek pide
own recipe, inspired by several others

Dough:
1 teaspoon dried yeast
½ teaspoon granulated sugar
1/3 cup (80ml) lukewarm water
¼ cup (60ml) lukewarm whole milk
1 ¼ cups (175g) all purpose flour
¼ cup (35g) whole wheat flour
½ teaspoon table salt
2 tablespoons extra virgin olive oil

Filling:
2 tablespoons unsalted butter
1 large leek (120g/4oz), white/light green parts only, sliced
2 large garlic cloves, minced
250g (9oz) beef mince
1 teaspoon smoked paprika
2 ripe tomatoes, deseeded and diced
salt and freshly ground black pepper
handful of fresh parsley leaves, chopped

For brushing the dough:
1 tablespoon extra-virgin olive oil

Start with the dough: in the bowl of an electric mixer, combine yeast, sugar, water and milk and mix with a fork. Set aside until foamy, about 5 minutes. Add flours, salt and olive oil and mix using the hook attachment for about 8 minutes or until dough is elastic and smooth – if mixing by hand, 12-14 minutes should be enough. Form dough into a ball, transfer to a large lightly oiled bowl and cover with plastic wrap. Set aside in a draft-free area for about 1 hour or until doubled in volume.

While dough is proofing, make the filling: heat butter on a large saucepan over medium heat until melted. Add the leek and cook, stirring occasionally, until tender, about 5 minutes. Stir in the garlic and cook for 1 minute or until fragrant. Add the beef and cook, stirring occasionally, until golden, 5-7 minutes. Stir in the paprika, the tomatoes, season with salt and pepper and cook for another 3-5 minutes or until tomatoes are soft. Stir in the parsley, remove from the heat and cool completely.

Preheat the oven to 200°C/400°F. Line a large baking sheet with foil.
Divide the dough into 4 equal portions. Roll each portion into a rough 25cm (10in) long oval shape. Spread the cooled filling along the center. Pinch the edges together so your pide looks like a boat. Transfer to the prepared sheet and brush the dough with olive oil and bake for 25-30 minutes or until golden brown. Serve at once.

Chayote, carrot and white bean soup

Days ago I was watching a clip about the last Berlinale in which there were a few interviews with directors and actors, and that included The Lost City of Z cast.

There was a lot – A LOT – of screaming when Robert Pattinson hit the red carpet and I truly cannot understand why someone would go crazy over him like that while Charlie Hunnam was on the very same red carpet. :)

That made me think of this soup I made a while ago, using chayote. I find chayote so bland – Robert Pattinson-kind-of-bland – that I rarely use it in recipes, but it worked well in the soup, combined with other veggies. The addition of white beans makes it hearty and fulfilling, perfect for cold nights, and any leftovers can be kept tightly covered in the fridge for up to 2 days.

Chayote, carrot and white bean soup

2 tablespoons unsalted butter
½ tablespoon olive oil
1 celery stick, finely chopped
1 leek, light green part only, finely sliced
½ large onion, finely diced
2 garlic cloves, finely chopped
1 ripe tomato, deseeded and diced
1 tablespoon tomato paste
1 chayote, peeled and diced
2 carrots, peeled and diced
1 potato, peeled and diced
salt and freshly ground black pepper
4 cups (960ml) hot vegetable stock – homemade is better ;)
2 cups (480ml) hot water
2 bay leaves
2 thyme sprigs
1 ½ cups (250g) canned white beans, drained and rinsed

In a large saucepan, heat the butter and olive oil over medium-high heat. Add the celery, leek and onion and cook, stirring every now and then, until softened. Stir in the garlic and cook for 1 minute or until fragrant. Add the tomato and cook for about 2 minutes or until tomato starts to dissolve. Stir in the tomato paste, cook for 1 minute, then add the chayote, carrot and potato. Cook for 3-4 minutes, season with salt and pepper and add the stock and the water, followed by the bay leaves and the thyme. When mixture comes to a boil, cover it partially, turn down the heat and cook for 30-40 minutes or until vegetables are soft.

Remove from the heat. Remove the bay leaves and the thyme from the soup, then blitz it with a hand mixer until partially chunky (or to taste). Add the beans and take soup back to the heat just until beans are heated through.

Serves 6

One fantastic rye pastry, two tarts: leek and cheese galette and plum and blackberry galette

One of the things I find most magical and fascinating about cooking is that even if you’ve been doing it for a long time – in my case, nearly 25 years – there always something new to try, or a new way to try something you already love: food is dynamic.

After making those delicious jam bars with rye flour, I began searching for other ways to incorporate the beloved ingredient in my baking and saw these beautiful apricot galettes in one of my favorite books (and one of the most beautiful I own, too). I like Amber Rose’s approach to food and everything I had made from her cookbook had turned out great until then, so I was really looking forward to trying her rye pastry.

It was a revelation.

As I ate pieces of the galettes, first the savory, then the sweet, I was mesmerized: how could that be so delicious?

Making the pastry was easy using a food processor, and as I rolled and folded it I kept thinking that the result would be a very flaky pastry, which is something I love – it indeed turned out flaky, and so tasty. Divine, actually.

When I placed the two little packages of pastry in the fridge for their final rest, I saw the leeks I’d bought for soup and had a sudden urge: instead of making two plum tarts, why not make one sweet and one savory? Dinner and dessert with one pastry recipe = perfection. :)

I cooked the leeks with some white wine (me and my love for booze) and paired it with cheese for the savory galette – it turned out amazing. The plum tart was really good, too. The rye pastry, besides being flavorsome and flaky, was great paired with both savory and sweet fillings. The recipe is a keeper and I hope you give it a go – I cannot wait to make it again with different fillings: tomatoes, goat’s cheese and thyme is a combo I would love to try with this pastry, and I bet that apples and pears would be lovely with it, too.

Plum and blackberry galette (with rye pastry) / Galette de ameixa e amora (com massa de centeio)

Rye pastry (enough to make both tarts)
slightly adapted from the beautiful and delicious beyond words Love, Bake, Nourish: Healthier cakes and desserts full of fruit and flavor

120g rye flour
120g all purpose flour
1 teaspoon sugar
½ teaspoon table salt
175g unsalted butter, cold and in small cubes
1 teaspoon white wine vinegar
7-8 tablespoons ice-cold water
1 egg, lightly beaten with a fork, for brushing

Plum and blackberry filling
adapted from the same cookbook

4 plums, each cut in eighths
½ tablespoon honey
pinch ground cinnamon
8 frozen blackberries
demerara sugar, for sprinkling

Leek and cheese filling

1 large leek, white part only, sliced
1 tablespoon unsalted butter
1 teaspoon olive oil
salt and freshly ground black pepper
1 ½ tablespoons white wine
60g gruyere, grated
1 tablespoon finely grated pecorino or parmesan, for sprinkling

Start by making the pastry: place the flours, salt and sugar in a food processor and blitz to combine. Add the butter and pulse until the mixture resembles coarse meal. Add the vinegar and half the water and pulse until a dough starts to form – add more water if necessary, but do it gradually. Form a ball with the dough, wrap in plastic wrap and refrigerate for 1 hour.
Unwrap the dough, place on a lightly floured surface, and roll into an oblong shape about 20x28cm (8x11in) - don't worry if the dough is still a little crumbly; it will come together with the rolling.
Fold the dough into thirds (as if you were folding a letter), roll out to its original oblong shape, and then fold into thirds again. Repeat the process, then divide the dough in half, wrap each in plastic wrap and return to the fridge for at least 1 hour or overnight.

When ready to make the tarts, place each piece of dough onto large piece of baking paper and roll into a rough 25cm (10in) circle. Transfer each to a baking sheet.

Fruit tart: put the plums in a bowl with the honey and the cinnamon and toss to combine. Arrange the fruit on the center of the dough, top with the blackberries and drizzle with the juices left in the bowl (if there’s too much, use only half to avoid a soggy crust). Carefully fold one edge in towards the center of the fruit and continue folding all the way round, bringing the edge of the pastry towards and over the filling. Place the sheet in the freezer for 30 minutes – in the meantime, preheat the oven to 180°C/350°F.

Savory tart: heat the butter and oil in a large nonstick frying pan. Add the leeks and cook until fragrant and beginning to turn golden, stirring occasionally. Season with salt and pepper, add the wine and cook until it evaporates, 2-3 minutes. Cool.
Arrange the gruyere on the center of the dough, top with the cooled leeks, then fold one edge in towards the center of the filling and continue folding all the way round, bringing the edge of the pastry towards and over the filling. Place the sheet in the freezer for 30 minutes – in the meantime, preheat the oven to 180°C/350°F.

Brush the tarts with the egg wash (only the pastry). For the sweet one, sprinkle with demerara sugar. For the savory one, sprinkle with the pecorino.

Bake for 35-40 minutes or until golden brown. Both tarts are delicious both warm and at room temperature.

Leek, carrot and potato soup or "my soup", according to my husband

Soups and winter go perfectly together, right? I make soups quite often during the colder months, and when I do I usually make a large batch so we can have it for dinner two days in a row. I have noticed that most soups, and the one I bring you today especially, taste even better the next day, so there’s another reason for making extra soup. :)

I like to vary when it comes to food and soup is no exception, but this is my husband’s favorite soup: whenever he wants me to cook it he says “why don’t you make your soup tonight?”, and I know that by my soup he means the vegetable soup I’ve been making for as long as I can remember. I have made this soup with and without the leek (just onions and garlic), with squashed added in the mix, with and without the pasta and rice replacing it, you name it. The fresh oregano is a recent addition: I’d always made this soup with parsley only, but on a given day I did not want the oregano bunch to go to waste and ended up adding it to the soup – after that, it became indispensable.

This is a very simple, yet versatile recipe and you can adjust it to make it your own. I used butter because I can’t resist using it with leeks, but you can omit that for a vegan soup.

We love having this soup with some crusty bread on the side, but it would be a crime for me not to suggest Barbara Lynch’s grilled cheese, too. :)

Leek, carrot and potato soup

1 tablespoon unsalted butter
½ tablespoon olive oil
1 leek, white part only, chopped
½ large onion, finely diced
2 fat garlic cloves, minced
2 ripe tomatoes, seeds removed, finely chopped
3 carrots, in small cubes
3 potatoes, in small cubes
boiling water, enough to cover the vegetables
salt and freshly ground black pepper
handful fresh oregano leaves
handful fresh parsley leaves, chopped
1 cup cooked small shaped pasta, such as ditalini*

Heat butter and olive oil in a large saucepan over medium-high heat. Add the leek and onion and cook until transparent, stirring occasionally. Add the garlic and cook until fragrant. Add the tomatoes and a pinch of salt and cook until they are mushy. Add the carrots and potatoes and stir to combine. Cover with boiling water and season with salt and pepper. When the soup comes to a boil, reduce the heat to medium-low, cover partially and cook until vegetables are tender, 10-15 minutes.
With an immersion blender, blitz the soup for a couple of seconds – you want the mixture to be half chunky, half smooth. Add the oregano and parsley, check the seasoning.
Divide the pasta among the serving bowls, top with the soup and serve.

* Once the pasta is in the soup it won’t stop swelling – that is why I cook it separately and add it only to the bowls when serving and not to the entire batch of soup

Leek meatballs and what "Breaking Bad" and "Sons of Anarchy" have in common

One of the many reasons why I love Breaking Bad is that the show never compromised – I never felt like something was being done to please the audience, or that something had been suddenly changed to give us a happy ending. I love it when TV shows don’t take the coward route just so the viewers can feel less shocked – for instance, I might not like GoT but I truly admire the courage of the people behind it.

Now that I have finished watching season 1 of the excellent Sons of Anarchy I feel that this is not the coward kind of show, which makes me love it even more - apparently the people behind it don’t compromise either so season 2, here I go, and as soon as possible.

These meatballs, with a huge amount of leeks combined with the beef, were a wonderful surprise: incredibly light in texture, easy to make, delicious and great to have in the freezer (they can go to the oven still frozen, just bake them for a little bit longer), they might not be your typical meatballs but are certainly worth trying.

I might not accept silly, coward TV shows but I’m more than willing to accept meatballs made with more leeks than beef, especially when they taste this good. :)

Leek meatballs
slightly adapted from the über beautiful Jerusalem: A Cookbook

450g leeks, trimmed
300g beef mince
1 fat garlic clove, minced
1 egg
90g breadcrumbs
salt and freshly ground black pepper
handful of parsley leaves, chopped

Cut the leeks into slices, rinse well, and steam them for about 20 minutes until completely soft. Drain and leave to cool. Squeeze any residual water using a colander.
Pulse the leeks in food processor to chop, but don’t turn them into a paste. Transfer to a large bowl and add the beef, garlic, egg, breadcrumbs, salt, pepper and parsley. Mix to combine, then try to shape the mixture into balls – the job becomes easier if you lightly wet the palms of your hands. If the mixture is too wet, add 1 tablespoon breadcrumbs and mix again. Refrigerate for 30 minutes.
Preheat the oven to 200°C/400°F. Line a large baking sheet with foil and brush the foil lightly with oil. Place the meatballs onto the foil and bake until golden and cooked through (about 30 minutes). Serve immediately.

The uncooked meatballs can be frozen for up to 1 month.
