Tomato, hearts of palm, olive and parmesan salad with basil dressing

Tomato, hearts of palm, olive and parmesan salad with basil dressing

Every time I visit Kalyn's blog - and I just won't do it on a daily basis in case I'm sick or loaded with work - I feel like cooking everything she posts! Her food has a healthy tone and looks delicious. Hard to resist.

This is my take on one of her recipes - I have made this salad several times already and even João likes it, even though he's not into tomatoes (crazy, I know).

I used parmesan shavings instead of feta because I couldn't find it where I live. I also changed the dressing a bit.

Make sure you check the original version - you'll be glad to!

Tomato, hearts of palm, olive and parmesan salad with basil dressing

4-6 small tomatoes, sliced
1 cup hearts of palm, sliced (or more)
½ cup black olives
½ cup parmesan shavings

Basil dressing:
1 cup fresh basil leaves (packed)
extra virgin olive oil, to taste – I didn’t use a lot because I wanted a low-calorie salad
lime juice
salt
freshly ground black pepper

In salad bowl, layer tomatoes, hearts of palm, olives and parmesan.

Using a mortar and pestle, mash the basil leaves and salt together. Add the pepper, olive oil and lime juice, mix well.
Drizzle basil dressing over salad.

Serves 2

I love the look of this. I have never had hearts of palm, and I have only seen them canned, not fresh (but I don't really know what I'm looking for...)

I just discovered hearts of palm a little while back, and love them!! I'm gonna give this a try once I have some more tomatoes from my garden.

This looks easy and tasty. Do you think putting in artichoke hearts would work? I'm currently on an artichoke heart fling.

Patricia,
Yes, I always want to try Kalyn's recipes, they are always so great looking and healthy!!
I like your take on this very much.

Lynn-

I've been on a huge artichoke binge myself.
I love the idea of this dish with artichoke instead- I can't wait to try it out. Do you ever grill artichoke? Best decision i've made :) http://www.subzero.com/livingkitchen/lifestyle/tipsdetail.aspx?tid=2&oid=8

Oh, I love tomatoes, especially right now with the many varieties at the farmers' market. I'll have to pair them with some hearts of palm. Simple and fresh--perfect for summer. Thanks Patricia and Kalyn!

I must admit that I rarely eat hearts of palm -- perhaps I read somewhere that they are high in something I shouldn't eat, but I honestly cannot remember what! I will have to give them another try.

Janet, thank you!
I use only canned ones, since the fresh ones need to be cooked, if I'm not mistaken.

Deb, they're extremely light and low fat, so I use them a lot.

Lynn, I think it would be wonderful, what a delicious idea!

Tanna, exactly! Her recipes are great, and so are yours.
Thank you, I'm glad you liked it!

Rose, me too! And low calorie, too. :)

Susan, tomatoes are wonderful, you're right! Thank you, sweetie!

Anh, you'll like it, I'm sure!

Lydia, I like them a lot and always have a jar in my pantry. :)

Joey, it's very refreshing and delicious with a slice of crusty bread. :)

Susan, I don't like lettuce, can you believe it? They taste like nothing - I always prefer rocket (arugula) or watercress instead.

Valetnina, you should! You'll love it, not to mention that Kalyn is such an adorable person.
I like it when he likes the food because he's such a picky eater. :)

Truffle, they go really well together. :)

Celine, thanks!

Linda, the dressing is delicious!

Oops, forgot to say for those who seemed to be wondering, hearts of palm are very low in fat and carbs and don't have anything at all unhealthy about them that I'm aware of.

This sounds wonderful, Patricia. I particularly like the basil dressing. It was sounding like pesto 'til I got to the lime juice--a nice, tart kick.

This look great, and just like something that's normal fare around here as well; I live in southern Italy so anything with tomatoes is fair game ;)

Haven't seen hearts of palm around here, though, but this is a good reason to look!
