Wow, almost a week without a new recipe around here... You guys must be bored to tears with my crepe photo. :)
A stomach flu kept me away from cooking, posting and reading my favorite blogs. But now I’m feeling well again – thanks to tons of medicine and rest – and eager to go to the kitchen.
This is something I baked before I got sick; you know I can’t resist recipes with sweetened condensed milk – right, Lynn? – and the thought of a cake made with it instead of sugar was too good for me to pass.
It’s a very light and sort of spongy cake. No decadent fillings or icings – just a simple cake, to be enjoyed with a cup of coffee or tea. Or a glass of orange juice on a hot day.
Sweetened condensed milk cake
from a Brazilian cookbook
1 can (395g) sweetened condensed milk
4 eggs
120g all purpose flour
½ tablespoon baking powder
50g unsalted butter, melted and cooled
icing sugar, for dusting
Preheat the oven to 180ºC/350ºF; generously butter a 22cm* (9in) ring cake pan.
Place all the ingredients in a large bowl and mix well. Pour the batter into prepared pan and bake for 20 minutes, or until risen and a skewer inserted in the cake comes out clean (my cake took 35 minutes to bake).
Remove from the oven and place on a wire rack to cool completely before unmolding.
Dust with icing sugar before serving.
* I used a 20cm (8 in) pan.
Serves 10-12

Glad you're feeling better!
I love the simple sorts of cakes. This looks like a goody.
Hey, welcome back! I hope you've fully recovered by now :)
Oh, you know I absolutely LOVE sweetened condensed milk. (Must be that microscopic bit of South American blood running through my veins ;) You know, it may not need icing, but a nice drizzle of condensed milk would not be unwelcome, yeah!!!!
So glad you are feeling better!
Wow--this cake looks so white and pretty! I, too, love sweetened condensed milk. I think I could probably just drink it straight out of the can...
Glad to see you are feeling better. I just got a ring pan so this looks great!
Happy to hear you are feeling better!! :-) This cake sounds delicious, I am trying to imagine if it has a sweet condensed milky scent...
Glad you're feeling better, and that you're baking again! My husband is a sweetened condensed milk fan, and he will love this cake.

Wow, such a simple delicious cake!! I just picked up a couple cans of sweetened condensed milk so I'll have to make this for my husband when he gets back in town!
Good to see you're feeling better! I love how easy this cake is Patricia and how soft and fluffy it looks.
I'm glad you're feeling better. I love anything with sweetened condensed milk in it! I will definitely be trying this!

Condensed milk is the best! Cake looks yummy!
I just bought four cans of it because it was on sale. With the impending holidays I will use it and I will try this recipe.
Sorry to hear about the stomach flu but good to hear you feel better.
Love the idea of using scm like this! The cake looks very delicate.
Sweetened condensed milk is extremely popular over here too! And I have to admit, I love cake recipes that say "put everything in a big bowl and mix" :)
Oh no fun! The stomach flu...boo. But yay for that cake. It sounds yummy.
Glad to know you're feeling better now...and I absolutely love the simplicity of the cake :-)
That kind of cake is just beautiful. Simple, yet it's quite elegant too. I'm intrigued at the difference the sweetened condensed milk makes in the cake, compared to one made with sugar. I'll have to try it to see, right? I'm glad you're feeling better and well rested. :)
it looks moist!
Patricia don't worry for us..:-P we wait here patiently for your amazing recipes and stunning photos!
And it was worth the wait ! look at those slices of cake! WOW simply WOW!!!

You'd be delighted here, tons of our recipes include this wonderful ingredient... ;)
Sarah, thank you! And I have done that. I don't keep the stuff around the house, otherwise I'll attack the can in a moment of weakness. I'll only buy it when making a recipe that calls for it. :D

Patricia, I'm tickled to know you're recovering nicely.
Btw, I'm also a SCM and pound cake devotee. So, that cake has my name written all over it. Oh, to be able to reach in through the monitor and nab that plate.
Would it be a good batter for cupcakes do you think?
I am totally with you with the condensed milk!! I keep on buying cans of it yet not doing anything with it though. This cake looks so good and easy! I will definitely make it soon.
I think I would looooove this cake!
It looks so good.
That looks like an utterly delicious and totally comforting cake, Patricia!
strangely when i made this as cupcakes they came out rubbery !
simply258: i got the same rubbery texture as u! i made it as a bundt cake! it might be becos i didnt beat the eggs long enuff? but it smelt soo great, my boyfriend ate it up!
Now, this is something dangerous! I mostly bake for others but I'm so afraid if I made this I'd eat it all by my lonesome. Whoa baby!
This cake looks so simple and sabroso, I'm gonna try it right away!
I'm a huge fan of condensed milk and dulce de leche!!
hugs from Shanghai!
i found this cake to be kind of eggy and, despite using cake flour and being careful not to overmix, a bit chewy/tough. it might work in strawberry shortcake, but i can't see myself making this again.
Hi. Just wanted to say I tried this cake, and it turned out fantastic. My kids and husband devoured it. Love your blog. I always come here for inspiration.
Nice, wil be great with custard for a pudding
I tried this cake. The taste was fabulous. However, the texture was quite heavy and dense. It didn't rise and didn't look as nice as your. Is it supposed to be like this? When you mix all ingredients together, do you use an electric mixer to beat?
That said, I love this cake!
My Gran used to make a cake like this and when she died the recipe went with her - it looks the same and all I know it was made with condensed milk - i'm gonna give it a go at the weekend - thanks for sharing!
Julian
I tried this recipe, and it turned out ok, but more on a dense side. Mixed all ingredients at once with electric mixer for about 5 minutes. Baked for 35 minutes. It appeared risen when just out of the oven but 2 minutes later the top flattened.
Hello, New to Baking,
I really don't know what could have happened here - was it baked through? Did you test it with a skewer prior to removing it from the oven?
Just finished the cake with three eggs instead of four.
It sunk in the middle :( but looks awfully exciting! :)
Kenney, I'm sorry to hear it sunk. :(
Patrícia, have you "addapted" the flour to your recipe when translating to English? What I mean is, when I moved (from Brazil) to the US I tried to make cakes I used to make in Brazil and none worked. I finally realized it was the flour! I have tried a few Brazilian cake recipes with cake flour and it worked--so far at least...
Hi Anonymous, I used all purpose flour, so I kept it on the recipe. I know the flours are different, but unfortunately I can't really say for sure it would work with cake flour since there isn't any here.
Tks for your input.
hi i was searching on net for a cake recipe with condensed milk and i got yours i tried it but the outcome was a total disaster. idont know what went wrong. i used 1 can condensed milk,4 eggs,1 cup flour(120g),1/2 table spoon baking powder,50g butter,i dont like dusting the sugar so i add 1/2 cup sugar.first i beat the butter ,egg and condensed milk till fluffy,,is it there i went wrong because after baking for more than 1 hr the cake is still not cooked the outer crust burned but the inner part still not cooked.could u say where i went wrong thanking you
You should not have added any sugar!
Hi Guys, just a question that Im sure you will think is silly, but here goes, I dont have a ring tin, can I use a different tin and if so what do you . cheers Sharyn
Sharyn, the pan I used holds 8 cups of batter.
Thanks for sharing the recipe! I made this and it was very well received. :)
Baking Fiend, I'm so glad you liked the recipe! Thank YOU for letting me know how it turned out!
Thank you! This was so delicious and so simple!
Hey, Aggie - I'm so glad to hear you liked the cake! Thank YOU for letting me know how it turned out!
I used your recipe exactly and the cake is rubbery. What causes this?
Hey, Anonymous, I have no idea.
Can i replace the All-Purpose Flour with Top Flour?
Hi, Drew - I do not know Top Flour, sorry!
Hello I am in Mexico in a small town called Cuautla. Hello to all and Hi to Patricia. I was looking for a recipe simple and nice and I found your blog. I made it with Mexican all flour! So I have 4 of them in the oven. I am praying for a nice out come LOL Thanks for posting. LOVE TO YOU ALL

Gill
Gill, I hope the mini loaves turn out fine!
I am brazilian and I was excited about this brazilian recipe, I live here in US I just baked my cake and turned out pretty good, I just forgot to take it out when I should, so, now is a little darker, but taste very good, and is simple and easy, and I didn't have milk in mi fridge tonight so I found this recipe that I didn't need to add milk, so thank you for this recipe I love it.
Hey, Kenia, I'm glad to hear you liked the recipe! Thank you for stopping by and letting me know.
Thank you for this. So easy, quick, & delicious. I didn't frost or anything; it doesn't need it. I added a few drops of almond extract. Perfect. It was heavy like a pound cake, & that was fine for our needs, something to go with a cup of coffee. I'm in Portugal, from U.S.
Hey, there,
I am glad you like the recipe! And I love the idea of adding almond extract to the cake.
Thank YOU for letting me know how it turned out!
my cake is in the oven ...and looks yummy
Dana, I hope you like the recipe!
Dear Patricia the cake turned out fantastic! Such a tender cake!! It reminds me of a pound cake!! So simple and easy to make, so tasty outcome!(in my oven it took 45 min) Congratulations once more!! Your blog, your recipes and your photos always make my day!!:-)))) many kisses! Evi

I'm glad to hear you like this cake! Thank you for letting me know how the recipe turned out!
xx
I made this and it turned out like rubber. Kind of like a giant eggy pancake?
Hi Anonymous - it is not supposed to be rubbery...
Trying this recipe for the first time. Don't use an Angel food pan with lift out it leaks. Otherwise my daughter and I are looking forward to trying this since she is crazy about condensed milk.
