When Helene announced the theme for this HHDD I was petrified – despite playing around in the kitchen for as long as I can remember, I haven’t made many mousse recipes so far. Panic.
I wanted to make 100 mousse recipes and 10 seconds later I wanted to make none. And then I remembered little chocolate cups filled with ganache I had seen in some weddings and also in some websites. I thought: I’m filling the cups with mousse!
In theory everything sounded wonderful, but in the real world things didn’t work out the way I expected them to. The cups weren’t beautiful as the ones in my head and, camera in hand, I couldn’t find a nice way to photograph them.
As I missed Peabody’s HHDD about cheesecakes and I don’t want to miss another one, there you go.
One thing I must say in my defense: the condensed milk balances well the tart flavor of passion fruit – so you won’t look like her when you take a bite.
Passion fruit mousse in tiny chocolate cups
Chocolate cups:
200g chocolate – I used white and dark, 100g each
25 small fluted paper cups (the ones used for petit-fours, truffles, etc.)
Mousse:
90g sweetened condensed milk
65g cream
65ml concentrated passion fruit juice
Decoration:
pulp of half a large passion fruit – I think that mini chocolate curls would work fine too
For the mousse: place all the ingredients in a blender and blend well. You can place them in a bowl and beat well with a whisk – the key here is to incorporate air into the mixture to make it light.
Cover and refrigerate for 2-3 hours.
Make the chocolate cups: melt chocolate using a double-boiler or the microwave oven. Temper it – click here to learn how.
Using a small spoon, spoon chocolate inside each paper cup, spreading evenly and almost up to the edges – leave a thin line free of chocolate so you can tear the paper cup and remove the chocolate from it easily.
Place the cups on a plate and refrigerate until chocolate is firm (10 minutes or so).
Carefully, start tearing the paper molds unmolding the chocolate cups. Set aside.
Remove the mousse from the refrigerator and with a small spoon pour amounts of it inside each chocolate cup. Top with the passion fruit seeds and serve.
Chocolate cups can be made ahead and stored in a dry and cool place – never in the refrigerator.
Makes about 25 – I got 12 with the white chocolate and 13 with the dark chocolate.

This looks sooooo tempting! And you used condensed milk Pat!:)
Must have been so addictive:)
So beautiful!! Well, you certainly succeeded with the mousse. I had passion fruit growing in my backyard when I lived in the South, as a kid. I love the way you decorated the tops!
How absolutely adorable! I can see these being the perfect one-bite morsel! Or maybe two...or three? :D
I haven't asked you this : Do you own a bakery or something? Seriously, you should open one. I'm sure customers will be flocking in!
Passionfruit..Yummie... Those lovely fruits. I envy you. It´s a pity, I can very seldom buy them ripe.
Is there a way of ripeninig them quickly?
Love the little seeds on the top! They look like they're dipped in aspic -- so beautiful.
I think they look quite lovely Patricia!
Adorable, Patricia! The cups are a great serving idea!
Hi Patricia,
These are gorgeous! The chocolate cup idea is genius, you can just pop the whole thing in your mouth! Yum yum yum. Chocolate and passionfruit sounds like a divine combination. I've never made mousse before either (also a bit intimidated). :P (You made me chuckle with the reference to Renee, heheheh).
Awwww so cute!! I love this idea and combination of flavors! Another beautiful job =)
xoxo
Tanna, thank you, sweetie. I'm so glad you liked it!
Tina, your opinion on them made me feel more secure to post them, my dear.
Helene, that's a rip off! I love it too but I wouldn't pay that much.
Tigerfish, you can have as many as you want - just let me tell you that I think the white chocolate ones are more delicious. :)
Anh, I love tart flavors with chocolate.
Rose, this mousse is very easy!
Valentina, I'm crazy for condensed milk! :)
Sher, thank you! I thought of using chocolate curls but gave that up in favor of the passion fruit pulp. I'm a tart kind of gal. :)
Ellie, thank you, darling! Have as many as you wish, please!
Pablopabla, I do not - unfortunately! I work as a secretary but I'd love to have my own bakery or cake shop - that would be fantastic!
Thank you for your lovely comment.
Karin, I'm not sure - what if you try wrapping them in newspaper? Some people do it here with avocados and papayas and it works fine!
Lydia, tks!! Your comments are always making me improve my cooking.
Kristen, thank you - I'd exchange them for that beautiful bundt cake you made. ;)
Gilly, it's mousse with a twist!
Amy, thank you! I liked the white ones better, because I think white chocolate is perfect with citrus and tart flavors.
Doesn't she look like she's had a bucket of lemon juice or something? lol
Lis, thank you - you're too kind!
xx
Patricia, those little mousse cups look so cute and yummy. And I sure do miss passion fruit. They were my favorite thing to eat back in the Phils.
Mousse in baking cups...great idea...it looks so cute in there.
I think your little mousse cups look wonderful! And passionfruit was an excellent choice!
The chocolate cups came out perfect! And those photos look very, very tempting from where I'm sitting (unfortunately for me, that's somewhere where I can't easily reach out and grab some!)
Can you believe I've never tasted passionfruit? I'm missing out!
The recipe just sounds sophisticated! And in such a adorable size, who can resist it?
Smooth, unripe passion fruit will ripen in a few days at room temperature, they say. It takes longer time. That´s a pity when you need them at once.
Is this true?
Tests have shown that passion fruit juice has a slight sedative effect as a result of the combination of glycosides and flavonoids present. Both the juice and the flowers of the plant have been used in remedies to treat anxiety and high blood pressure.
"2 glasses of juice will naturally calm down the most hyperactive child, and for this reason it is highly valued by Brazilian mothers."
The little cups are gorgeous! Patricia, do you ever make anything that isn't heart stoppingly yummy?
What a novel idea, Patricia! From the ingredients to the presentation, I think this is brilliant!
LOVE the chocolate cups especially. i was considering doing a chocolate cup, but nothing nearly so nice as yours!
Hi, Veron! Passion fruit is simply delicious, isn't it?
Peabody, thank you!
Brilynn, I'm trying to follow a little that philosophy of yours, "go big or go home". Inspirational!
Joey, I wish I could ship you some!
You should try passion fruit asap - it's very addictive!
Gattina, have some, sweetie!
Karin, it's always been said here that passion fruit juice is a natural tranquilizer. We all heard at some point of our lives to have some passion fruit juice to get calmer or even when you have trouble sleeping.
Freya, and you're so sweet, my dear friend and fellow Daring Baker!
Susan, tks!! You're far too kind.
Puu, I'm so glad you stopped by! Thank you for the lovely comment!
Patricia,
I love passionfruit - and your creation is wonderful!

Passionfruit are a favourite of mine too!
I love mini versions of everything. You can enjoy a few without the guilt.
These look so good. I have not tried using passion fruit in a mousse, but am really inspired to do so.

I wish I'd thought of the little choc cases. Very clever Patricia. Thanks for joining in at HHDD.
Oh the cups are cuties!! Lovely entry, Patricia!
